The IFT show and organization is important because food that doesn't taste, look, or smell good won't be eaten and, therefore, food additives are an essential ingredient in our food supply.

To understand the importance of the food processing / food ingredients industry just imagine a world without .. Man has since the beginning of time sought ways to extend food's freshness after harvest and slaughter, to enable it to be safely eaten at a later time - ancient techniques to preserve food products includes cooking and baking, drying, salting and fermentation. Likewise, food additives have been used for centuries (i.e. salt to preserve meats and fish; sugar to preserve fruit; vinegar to pickle vegetables; herbs and spices to improve the flavors; etc.). The reason for processing food is not only to make the food safe to eat at a later date, but also to enhance the look, taste and smell. Food processing often uses specific ingredients added to foods to maintain (or create) the sensory properties of the food. A food additive is any substance added to food. Food additives can be used as ingredients to preserve, flavor, blend, enhance the texture, and color food. According to the Code of Federal Regulations Title 21, Volume 3 (Revised as of April 1, 2001) regulations the term refers to "any substance the intended use of which results or may reasonably be expected to result-directly or indirectly-in its becoming a component or otherwise affecting the characteristics of any food." This definition includes any substance/compound used in the production, processing, treatment, packaging, transportation, or storage of food.
