Abstract for Freeze Dying Presentation

When drying a heat sensitive product, freeze drying is the preferred method. Freeze drying is the only method where both gentle drying and low water activity can be obtained at the same time.

There will be a short introduction to the freezing and freeze drying processes in general and the GEA Niro freeze drying technology in particular. Here the focus here will be on condenser, product trays and radiation versus conduction and continuous versus batch dryers.

The freeze drying process will be compared with alternative drying technologies both in theory and in practice with analyses of dried products verifying that freeze drying is better than other drying methods in regards to product temperature, obtainable water activity and biological activity.

These results are from tests with freeze drying of probiotics where freeze drying preserves the biological activity and freeze drying of material containing aroma where it preserves the aroma.
